Our Mushrooms

We grow our mushrooms with a balance of careful science and natural process. Starting with sterile lab work, we cultivate healthy mycelium before moving into a clean, controlled growing environment where temperature, humidity, light, and airflow are all closely monitored. Using simple ingredients—grain, wood, and water—we create the conditions each variety needs to thrive. It’s a hands-on process that takes time, attention, and constant observation, allowing us to harvest mushrooms at their peak in both flavor and quality.

King Blue Oyster Mushrooms

A great standalone mushroom that wants to grow huge caps. Even the stems are pleasantly edible for very little waste.

Mother of Pearl Oyster Mushrooms

Medium Caps | Meaty Texture | Savory Flavor

This pearly blue beauty has a delightful meatiness to the texture and a savory flavor that really stands out. We can’t stop eating them. Use it for a sauteed mushroom sauce or topping or make it the star of your dish.

Lions Mane Mushrooms

Delicate Flavor | Light Texture | Very adaptable

Lions Mane often becomes the star of the dish. It makes a great steak or a seafood style dish. Avoid over seasoning to let the delicate earthiness come through.

Chestnut Mushrooms

Small - Med Caps | Hearty Texture | Earthy flavor

Chestnuts have that classic mushroom shape and lovely warm color making them great as a garnish, on toast or anyplace you want the mushrooms to stand out without stealing the show.

Pioppino Mushrooms

Small - Med Caps on long stems | Hearty Texture | Nutty, flavor

Pioppinos are an italian mushroom. They have that classic mushroom shape and pale brown color.
